摘要
综述了小麦专用粉和改良剂的开发现状,指出优质小麦是前提,专用粉是基础,改良剂是必要手段。三者之间相互依赖,缺一不可。加强理论研究,制定更加科学和实用性强的标准,在实践中,灵活应用现有标准,综合评价和指导面制品的加工和生产。
This thesis summarized recent situations of special flour and its improver. The result is that good -quality is the premise, special flour is the basis and quality improver is necessary. The above three factors are indispensable and depending on each other. Developing theory research and making scientific and practical criteria to guide or value the process and production.
