摘要
对草地藏系绵羊和成都麻羊产乳量及乳的生化组成特性进行了比较研究.结果表明:草地藏系绵羊和成都麻羊经产母羊哺乳期的产乳量分别为38.28±1.54kg和46.15±1.78kg,草地藏系绵羊的产乳量极显著低于成都麻羊(P<0.01);乳中总固形物、乳蛋白、乳糖、乳脂分别为169.45±7.52和157.88±2.16g/L、48.45±13.21和44.18±2.65g/L、41.93±5.06和46.44±3.06g/L、69.43±11.41和58.69±2.71g/L,乳中总固形物和乳脂含量草地藏系绵羊均极显著高于成都麻羊(P﹤0.01);乳中4种酶γ-谷氨酰转肽酶(γ-GT)、碱性磷酸酶(AKP)、过氧化物酶(LP)和淀粉酶(AMY)的活力分别为268.25±89.18和194.27±94.33U/100ml、231.85±107.38和305.54±125.12U/100ml、3.97±3.68和5.45±2.81U/ml、80.65±73.91和82.73±69.67U/100ml,草地藏系绵羊乳中γ-GT活力极显著高于成都麻羊(P﹤0.01),而AKP活力极显著低于成都麻羊(P﹤0.01),乳中4种酶的活力个体间差异较大;乳中蛋白主要包括α-乳清蛋白(α-La)、β-乳球蛋白(β-Lg)、酪蛋白(CN)、免疫球蛋白(IgG)等组分,其中酪蛋白为优势蛋白,α-La含量较低,草地藏系绵羊乳中β-Lg含量显著高于成都麻羊(P﹤0.05),SA含量极显著高于成都麻羊(P﹤0.01),而CN含量则极显著低于成都麻羊(P﹤0.01).
The milk yields and milk biochemical composition properties of Tibetan Sheep and Chengdu Ma Goat are studied.The results show that the milk yields of multiparous Tibetan Sheep and Chengdu Ma Goat in suckling period are 38.28±1.54 kg and 46.15±1.78kg,respectively,the milk yields of Tibetan Sheep are lower than those of Chengdu Ma Goat(P<0.01);the contents of total solid matter,protein,lactose and fat in milk are 169.45±7.52 g/L and 157.88±2.16g/L,48.45±13.21g/L and 44.18±2.65g/L,41.93±5.06 g/L and 46.44±3.06g/L,69.43±11.41g/L and 58.69±2.71g/L,respectively,the contents of total solid matter and fat in Tibetan Sheep milk are higher than those in Chengdu Ma Goat milk(P<0.01);the activities of γ-glutamyl transpeptidase(γ-GT),alkaline phosphatase(AKP),lactoperoxidase(LP),and amylase(AMY) in milk are 268.25±89.18 U/100ml and 194.27±94.33U/100ml,231.85±107.38 U/100ml and 305.54±125.12U/100ml,3.97±3.68 U/ml and 5.45±2.81U/ml,80.65±73.91 U/100ml and 82.73±69.67U/100ml,respectively,the activities of γ-GT in Tibetan Sheep milk are higher than those in Chengdu Ma Goat milk(P<0.01),but the activities of AKP are lower than those of Chengdu Ma Goat(P<0.01),the activity differences of 4 enzymes among individuals are high;the main protein components in milk comprised α-lactalbumin(α-La),β-lactoglobulin(β-Lg),casein(CN)IgG,et al,the first-rate protein is CN,relative percentage of CN is 50%~70% approximately,but the relative content of α-La is low,the contents of β-Lg and SA in Tibetan Sheep milk are higher than those in Chengdu Ma Goat milk(P<0.05) and(P<0.01),respectively,but CN in Tibetan Sheep milk is lower than that in Chengdu Ma Goat milk(P<0.01).
