摘要
研究了用酸碱加热法提取紫花苜蓿叶蛋白的最佳工艺参数。设计了加热时间、加热温度和pH值3个单因素试验,并在单因素试验的基础上设计了正交试验。结果表明,最佳工艺参数为:pH值4.5,温度80℃,加热时间5 min,打浆时间9 min。
Regarding the leaf of alfalfa as the raw material,the technology of extracting leaf protein concentrates was studied by the single factor experiment.The optimal conditions(heating time,heating temperature and pH) were obtained.On the basis of this foundation,the orthogonal experiment of 3 factors was used.The result shows that the optimal extracting technical parameter is pH 4.5,the separating temperature is 80 ℃,the heating time is 5 min and the puree time is 9 min.The optimized extracting technical condition for leaf protein concentrates is given.This study could pay a foundation for further application of alfalfa leaf protein in food industry,medicine and so on.
