环境史视野下的唐代岭南饮食生活研究 被引量:2

Study on Diet of Lingnan in Tang Dynasty with Eenvironmental History

摘要 岭南山水交错、潮湿炎热的生态环境造就了别具一格的饮食生活。将唐代岭南的饮食生活置于环境史视野下审视,得知岭南人们主要通过种植、养殖、采集和渔猎等方式获取稻、麦、粟、薯以及瓜果蔬菜和飞禽走兽等食物。岭南的食物消费方法多种多样,既有炙、炒、煎、蒸、煮等熟制法,又有盐藏腌渍等干制法;既有众多的美味熟食,又有各种奇特的"异馔"生食。岭南特殊的生态环境孕育了敢吃、能吃、会吃、嗜槟榔、好酒的饮食习俗。通过阐述唐代岭南地区的食物获取、食物消费和食俗等内容,我们发现人类社会饮食生活概貌的形成和发展,实际上是人与生态环境互动的结果,体现了人与自然关系的辩证统一。 Lingnan,which are interlaced by the mountains and rivers and on a humid,hot environment,has cultivated a unique dietary and living customs.From the perspective of environmental history,it was found that people in Lingnan mainly obtained rice,wheat,millet,sweet potato,vegetables,fruits,fowls and beasts by planting,breeding,collecting,fishing and hunting in the Tang Dynasty.The method of food consumption in Lingnan is varlous,there are not only broiling,frying,decocting,steaming,boiling,but also are salted and salt pickling and other dry methods and so on.It is special ecological environment in Lingnan that has bred the eating habits which dares to eat,can eat,like to eat,love to eat,habits of areca and drinking wine.Through the exposition of the contents of food acquisition,food consumption and food custom in Lingnan of the Tang Dynasty,we found that the formation and development of the general catering life of human society are actually the result of the interaction between human and the ecological environment,which embodies the dialectical unity of the relationship between man and nature.
