摘要
探索和优化南酸枣皮脱涩工艺及其对枣皮品质(色差、总黄酮含量、DPPH自由基清除能力、铁离子还原能力、总酸、p H)影响。以南酸枣皮为原料,脱涩率为评价指标,在单因素试验基础上,采用正交设计法优化脱涩工艺。同时,对最优条件脱涩前后的南酸枣皮品质进行比较,评价脱涩工艺对南酸枣皮品质的影响。结果表明:南酸枣皮最优脱涩工艺条件为脱涩温度80℃、液料比10︰1(mL/g)、脱涩时间4 h,在该条件下,脱涩率达69.41%,且脱涩前后L*和b*值无显著性差异,a*值和p H升高,总黄酮含量、DPPH自由基清除率、铁离子还原力和总酸含量虽均呈下降趋势,但在可接受范围内。脱涩方法经济安全,高效可靠,适用于南酸枣皮的脱涩处理。
Exploring and optimizing the deastringency technology of Choerospondias axillaris pericarp and its effect on the quality of Choerospondias axillaris pericarp(color aberration,total flavonoids content,free radical scavenging ability of DPPH,ferric reducing ability,total acidity and pH).Based on the single factor experiments,the orthogonal design method was adopted to optimize the deastrigency process when Choerospondias axillaris pericarp was used as raw material and deastrigency rate was used as the evaluation index.Meanwhile,the quality of Choerospondias axillaris pericarp before and after the treatment by using optimal conditions were compared to evaluate the effect of deastringency process on the quality of Choerospondias axillaris pericarp.The results showed that the optimal deastrigency method was that the deastrigency temperature was 80℃,the liquid to material ratio was 10︰1(m L/g)and the deastrigency time was 4 h.Under these conditions,the rate of deastrigency could reach 69.41%,the values of L*and b*had no significant difference,the value of a*and pH increased,the content of total flavonoids,the clearance rate of DPPH,ferric reducing ability and total acidity decreased after deastringency treatment,but it was acceptable.The method was economical,safe,efficient and reliable,and suitable for the deastringency treatment of Choerospondias axillaris pericarp.
