摘要
分别用石油醚、三氯甲烷和乙醇依次提取丹参有效成分 ,用自动氧化稳定仪 (OSI)测定了3种提取物对猪油氧化稳定性的影响 ,发现石油醚提取物 (LE pet)和三氯甲烷提取物 (LE chl)有明显的氧化活性 ,其对猪油的保护系数与BHT和VE 接近。同时测定了LE pet和LE chl与其他抗氧化剂的协同作用及对Fe3+螯合作用 ,发现丹参的LE pet和LE chl与BHT和VE 都有明显的协同增效作用 ,对Fe3+也有一定的螯合作用 ,含 4mg/kgFe3+的猪油中分别添加 0 .0 2 %的LE pet和LE chl,可使其氧化稳定性提高 3.2和 2 .6倍 ,与柠檬酸 (CA)联合使用 。
The antioxidant activity for lard of three kinds of extracts LE-pet,LE-chl,LE-eth obtained by extracting tanshen(Salvia miltiorhiza Bung) with petroleum ether,chloroform and ethanol was studied.Simultaneously,the synergeistic effect with other antioxidants and chelating effect to ferric iron were tested with OSI.LE-pet and LE-chl show obvious antioxidant activity for lard by OSI (Oxidant Stability Instrument) method,and obvious synergetic effects with V_E and BHT,they also show certain chelating effect to ferric iron,0.02% LE-pet and LE-chl can improve the oxidant stability of lard containing 4 mg/kg ferric iron by 3.2 and 2.6 times respectively.They show a very strong antioxidant synergetic effect with CA.
