摘要
本文研究了苦荞籽粒各部分提取液的抗氧化活性 ,抗氧化能力大小顺序为麸皮 >外层粉 >芦丁>壳 >心粉。提取液中的总酚含量在 2 .34~ 4 3.4 5mgGAE/ 10 0mL ,酚酸主要是原儿茶酸和对羟基苯甲酸 ,黄酮浓度在 4 .34~ 74 .35mg芦丁 / 10 0mL ,原花色素浓度在 0 .6~ 10 0 .6mg/ 10 0mL。
The antioxidant activities of buckwheat seed extracts were studied.Results showe the activity strengths of the following order:bran>outer flour>rutin>iner flour.The contents of phenolic acids in extracts range from 2.34 to 43.35mg GAE/100mL,with protocatechuic and p-hydroxybenzoic acid being the main acids.The concentration of flavanoids and proanthocyanidin rang from 4.34 to 74.35mg rutin/100 and 0.6 to 100.6mg/100mL,respectively.The antioxidant activities of extracts were attributed to the total phenolics.
