摘要
主要介绍了壳聚糖在抗菌、保鲜和果汁澄清3方面的机理及研究成果,期望为壳聚糖在食品工业应用上进一步发展提供思路。
The mechanism and research results of three aspects in antibacterial,keeping fresh and fruit juice clarification of chitosan were mainly introduced to expect for application of chitosan in food industry and provide perspectives for further development.
