摘要
测定了流态大豆溶血磷脂的理化指标。研究了在不同pH值下流态溶血磷脂的乳化性能,证明溶血磷脂有很好的抗酸能力。测定了溶血磷脂的HLB值,并推导了溶血磷脂酸值和HLB值的关系。
The specification of soy fluid lysophospholipids has been determined. The emulsification performance of fluid lysophospholipids has been analyzed in different pH values. It proved that the emulsion that emulsified by lysophospholipids has good ability to resist the acid. The HLB value of fluid lysophospholipids has also been measured and the experience formula between HLB value and the acid value of fluid lysophospholipids was concluded.
