食品微生物检验培养基标准化体系的构建

摘要 食品微生物检验是保障食品安全的重要环节,其结果的准确性直接关系到食品的质量与消费者的健康。针对食品微生物检验中培养基质量控制标准分散、国际国内标准衔接不足等问题,本研究基于ISO11133的质控框架构建标准化体系,结合GB/T4789优化检测流程。通过建立“参数-方法-管理”三级整合机制,将国际标准与国家标准的核心要求融合,形成统一的培养基质量控制体系,为提升检测结果的可靠性提供理论支持。 Food microbiological testing is a critical component in ensuring food safety;the accuracy of its results directly impacts the quality of food and consumer health.In response to issues such as the lack of uniformity in medium quality control standards and insufficient alignment between international and domestic standards,this study constructs a standardized system based on the ISO11133 quality control framework,optimizing the testing process in conjunction with GB/T 4789.By establishing a three-tier integration mechanism of"parameters-methods-management,"it integrates the core requirements of international and national standards,forming a unified medium quality control system.This provides theoretical support for enhancing the reliability of test results.
