西藏沙棘提取物作为天然抗氧化剂在3种食用油中的应用评估

摘要 分析了西藏沙棘(Hippophae thibetana,HT)提取物中的主要化学成分及其抗氧化活性,并初步探究了HT提取物在抑制3种不同食用油氧化方面的抗氧化效果及机制。结果表明:HT提取物含有32种主要化合物,包括7种黄酮类、14种脂肪酸及其衍生物、8种氨基酸类、1种糖类化合物以及2种其他化合物;并具有良好的DPPH和ABTS自由基清除能力及铁离子还原能力。油脂氧化试验表明,添加了HT提取物的油脂的过氧化值始终低于空白组,尤其在亚麻籽油组中最为显著。分子对接分析发现,HT提取物中的杜鹃黄素以及假荆芥甙可能是潜在的抗油脂氧化活性物质。综上,HT提取物具有良好的抗氧化性能,可作为合成抗氧化剂的潜在天然替代物,以提高油脂稳定性并延长货架期。 The main chemical components and antioxidant activity of the extract from Hippophaet hibetana(HT)were analyzed,and its antioxidant effects and mechanisms in inhibiting the oxidation of three different edible oils were preliminarily investigated.The results showed that HT extract contained 32 major compounds,including 7 flavonoids,14 fatty acids and their derivatives,8 amino acids,1 saccharide compound,and 2 other compounds.The extract had good DPPH and ABTS radical scavenging activities and iron ion reducing ability.Lipid oxidation experiments showed that the peroxide values of oils treated with the HT extract were consistently lower than those of the control group,with the most pronounced effect observed in the flaxseed oil group.Molecular docking analysis revealed that azaleatin and nepitrin in the HT extract might be the potential active compounds responsible for lipid oxidation inhibition.In conclusion,the HT extract had good antioxidant capacity and could serve as a promising natural alternative to synthetic antioxidants for improving oil stability and extending shelf life.
