控释型植物精油微胶囊的制备及其机理研究现状

摘要 植物精油因其有抗菌、抗氧化、抗炎等生物活性具有重要的研究价值。然而,植物精油具有挥发性强、水溶性差、化学不稳定等缺点,限制了其广泛的应用。利用微胶囊技术将精油包埋起来,可以改善其挥发性、水不溶性和稳定性,从而提高其生物活性,还能实现精油对环境变化的智能释放,在精油领域有着巨大的应用前景。文章综述了典型的控释型精油微胶囊的制备技术和控制释放机理,以及控释型精油微胶囊在食品加工领域的应用,以期为控释型精油微胶囊在食品加工等领域的进一步研究与应用提供参考。 Plant essential oils have important research value due to their antibacteria,antioxidant,anti-inflammatory and other bioactivities.However,plant essential oils have the disadvantages such as strong volatility,poor water solubility and chemical instability,which limit their wide application.The use of microcapsule technology to encapsulate essential oils can improve their volatility,water-insolubility and stability,thus enhancing their bioactivities,and can also realize the intelligent release of essential oils in response to environmental changes,which has great application prospects in the field of essential oils.In this paper,the preparation technology and controlled-release mechanism of typical controlled-release essential oil microcapsules,and the application of controlled-release essential oil microcapsules in the field of food processing are reviewed,so as to provide references for the further research and application of controlled-release essential oil microcapsules in the field of food processing and other fields.
