摘要
以小窖白酒糟为原料,采用超声法提取酒糟中的酚类物质,并对提取物的总酚、总黄酮含量及抗氧化、降血糖活性进行分析。结果表明:在3种小窖白酒糟(酱香、芝香和浓香)中,芝香型酒糟的总酚、总黄酮含量以及ABTS自由基、DPPH自由基清除能力和铁离子还原能力均最高。对香豆酸和阿魏酸是3种酒糟中主要的酚类化合物,其含量分别在(37.01±5.31)~(51.57±3.91)μg/g DW和(45.25±2.26)~(226.25±13.98)μg/g DW,其中浓香型酒糟的对香豆酸含量最高,而芝香型酒糟的阿魏酸含量最高。α-葡萄糖苷酶抑制活性试验结果表明,3种小窖酒糟对α-葡萄糖苷酶均具有抑制活性,其中浓香型酒糟的抑制效果最好,抑制率为(57.58±2.96)%。总体表明小窖白酒糟具有较好的抗氧化和降血糖活性,开发利用前景较好。
Using Xiaojiao Baijiu distiller's grains as raw materials,the phenolic substances in distiller's grains were extracted by ultrasonic method,and the contents of total phenols,total flavonoids,antioxidant and hypoglycemic activities of the extracts were analyzed.The results showed that among the three types of Xiaojiao Baijiu distiller's grains(sauce aroma,sesame aroma,and strong aroma),the sesame aroma distill-er's grains had the highest contents of total phenols and total flavonoids,ABTS and DPPH free radical scavenging abilities,and iron ion reduction ability.P-coumaric acid and ferulic acid were the main phenol-ic compounds in the three types of distiller's grains,and their contents were in the range of(37.01±5.31)-(51.57±3.91)μg/g DW and(45.25±2.26)-(226.25±13.98)μg/g DW,respectively.A-mong them,the strong aroma distiller's grains had the highest content of P-coumaric acid,while the ses-ame aroma distiller's grains had the highest content of ferulic acid.The results of theα-glucosidase in-hibitory activity test showed that all three types of Xiaojiao Baijiu distiller's grains had inhibitory activi-ties against alpha glucosidase,among which the strong aroma distiller's grains had the best inhibitory effect,with an inhibition rate of(57.58±2.96)%.Overall,the Xiaojiao Baijiu distiller's grains had better antioxidant and hypoglycemic activities,and had a good prospect of development and utilization.
