摘要
蕈菌是宋人生活中的常见食材,蕈菌种类繁多,食用方式多样,从平民百姓到帝王将相都是蕈菌的食用者,充分显示了宋代饮食文化的多样性与丰富性。蕈菌虽味道鲜美,但有些具有毒性,加之种类众多难以分辨,因此蕈菌中毒事件时有发生,食物中毒是食品安全问题的具体表现之一,此类事件给宋代食品安全带来了巨大隐患。在长期食用蕈菌的过程中,宋人掌握了多种辨别毒性蕈菌的方法,解毒方法相较于前代也有所发展,折射出宋人对于食品安全的高度重视,以及在维护食品安全方面的进步。
Mushroom is a common ingredient in the daily lives of people during the Song Dynasty.With a wide variety of species and diverse ways of consumption,mushrooms were enjoyed by everyone from commoners to emperors and generals,fully demonstrating the diversity and richness of Song Dynasty's culinary culture.Although mushrooms are delicious,some are toxic.Coupled with the fact that there are so many species that are hard to distinguish,mushroom poisoning incidents were not uncommon.Food poisoning was one of the concrete manifestations of food safety problems,which brought great risks to food safety in the Song Dynasty.Over the long course of consuming mushrooms,the Song people mastered a variety of methods to identify toxic mushrooms.Compared with previous generations,their detoxification methods also saw advancements,showing the Song people's high emphasis on food safety and their progress to maintain.
