我国现行预制菜标准研究进展

Research progress on the current standards of prepared dishes in China

摘要 预制菜因其即买即食、方便快捷的特点,受众日益增多,市场规模持续扩大。预制菜产业的出现不仅迎合了当代消费者的生活方式,也促进了食品行业技术的转型与升级。预制菜产业的健康发展离不开标准的建立、支撑以及完善。本文从预制菜团体标准的分布情况、分类、特征以及存在问题等方面进行综述。从预制菜标准发布的数量与类型来看,主要涉及广东、山东、北京、安徽、河南5个地区;主要分为术语分类和评价通则标准、加工技术和操作规程标准、服务规范和管理要求规范标准、特定预制菜品产品标准和预制菜储卖设备规范标准五大类。目前我国预制菜标准主要存在分布不均、内容不完善、行业发展呈现不平衡状态等问题。 The prepared dishes have become increasingly popular due to their instant and convenient characteristics,and the market size continues to expand.The emergence of the pre packaged food industry not only caters to the lifestyle of contemporary consumers,but also promotes the transformation and upgrading of food industry technology.The healthy development of the prepared dishes industry cannot be achieved without the establishment,support and improvement of standards.This article provides an overview of the distribution,classification,characteristics and existing problems of prepared dishes group standards.From the quantity and types of prepared food standards released,five regions mainly involved such as Guangdong,Shandong,Beijing,Anhui and Henan.The standards can be divided into five types such as terminology classification and evaluation standards,processing technology and operating procedures standards,service specifications and management requirements standards,specific prepared dish product standards,and prepared dish storage and sales equipment standards.Currently,the standards for prepared dish industry in China mainly exist problems such as uneven distribution,incomplete content and imbalanced industry development.
