摘要
探究蔗汁柠檬复合饮料的最佳配方,并预测其货架期。采用混合设计法,以陶瓷膜过滤后的蔗汁、柠檬汁和水为原料设计复合饮料配方,通过感官评价确定最佳配比。运用ASLT法,在37、27和4℃储存条件下,监测饮料的pH、可溶性固溶物含量、总酚含量、澄清度、褐变度、微生物指标及感官品质变化,结合化学动力学原理预测货架期。结果表明:蔗汁︰柠檬︰水的最佳配方比为50︰3︰47,低温贮存下最长货架期约210天。本研究通过对蔗汁柠檬复合饮料的研制并建立货架期预测模型为进一步的工业化生产提供研究基础。
This article explored the optimal formula for sugarcane juice lemon compound beverage and predicted its shelf life.Using a mixed design approach,a composite beverage formula was designed using sugarcane juice,lemon juice,and water filtered through ceramic membranes as raw materials,and the optimal ratio was determined through sensory evaluation.Using ASLT method,the pH,soluble solid solution content,total phenolic content,clarity,browning degree,microbial indicators,and sensory quality changes of beverages were monitored under storage conditions of 37,27 and 4℃,and the shelf life was predicted based on chemical kinetics principles.The results showed that the optimal formula ratio of sugarcane juice,lemon,and water was 50︰3︰47,and the longest shelf life under low-temperature storage was about 210 days.This study adopts a mixed design method to design the formula of sugarcane juice lemon composite beverage,and uses ASLT method to predict the shelf life of the composite beverage,providing a research basis for further industrial production.
