褪黑素处理对采后树莓果实品质的影响

摘要 为探究外源褪黑素(MT)处理对采后树莓果实品质的影响,以“哈瑞太兹”红树莓为试验材料,使用不同浓度(0、100、200、300、400μmol·L^(-1))MT处理树莓,测定果实的硬度、失重率、色差、可溶性固形物(TSS)、细胞壁代谢相关组分含量和降解酶活性。结果表明:贮藏24 h时,100μmol·L^(-1)MT处理组的硬度和TSS含量分别比对照组高15.0%和21.2%,失重率比对照组低13.3%;在整个贮藏期,100μmol·L^(-1)MT处理组的原果胶和纤维素含量显著高于对照组,可溶性果胶含量显著低于对照组;贮藏12~36 h时,100μmol·L^(-1)MT处理组的多聚半乳糖醛酸酶、果胶甲基酯酶、纤维素酶、β-葡聚糖酶活性分别为760.9~862.0、6.0~9.3、800.2~1 189.5、2 096.4~3 102.7μg·h-1·g-1,显著低于对照组。综上,研究说明MT处理可通过抑制细胞壁降解酶活性维持细胞壁结构,保持采后树莓果实的贮藏品质。 In order to investigate the effect of exogenous melatonin(MT)treatment on the quality of postharharvest raspberries,‘Haritazi’red raspberry was used as the experimental material,and different concentrations of MT(0,100,200,300,400μmol·L^(-1))were used to treat raspberry fruit.The firmness,weight loss rate,color difference,soluble solids(TSS),cell wall metabolism-related components contents and degrading enzymes activities of fruit were measured.The results showed that after 24 h of storage,the firmness and TSS content of the 100-1μmol·L MT treatment group were 15.0%and 21.2%higher than the control group,respectively,and the weight loss rate was 13.3%lower than the control group.During the whole storage period,the protopectin and cellulose contents of the 100滋mol·L^(-1) MT treatment group were significantly higher than the control group,while the soluble pectin content was significantly lower than the control group.When fruits were stored for 12-36 h,the polygalacturonase,pectin methy-lesterase,cellulase andβ-glucanase activities of the 100μmol·L^(-1) MT treatment group were 760.9-862.0,6.0-9.3,800.2-1189.5,2096.4-3102.7μg·h-1·g-1,respectively,which were significantly lower than the control group.The results indicated that MT treatment could maintain the cell wall structure and preserve the storage quality of raspberry fruit after harvest by inhibiting the activity of cell wall degrading enzymes.
