摘要
食用腐败肉质食品会危害人的生命健康,因此研发能实时监测食用肉新鲜度的方法非常必要。肉质腐败过程中产生的挥发性有机胺(Volatile Organic Amines,VOA)是一类特异性标志物。相较于其它检测方法,可感应VOA的固体荧光标签不仅拥有操作简单、成本低、灵敏度高和可视化等优点,还可无损检测样品。本文主要对近5年的VOA检测固体荧光标签的识别机理和性能应用进行总结,并加以展望。
Misuse of spoiled meat can jeopardize people’s lives and health,so it is necessary to develop a method that can monitor the freshness of meat food in real time.Volatile organic amines(VOA)produced during the spoilage process of meat are a class of specific markers.Compared to other detection methods,solid fluorescent tag that can sense VOA not only possess the advantages of simple operation,low cost,high sensitivity and visualization,but also can detect samples non-destructively.In this paper,we mainly summarize the recognition mechanism and performance application of solid fluorescent tag for VOA detection in the last 5years.
