摘要
为了解树参Dendropanax dentiger的营养价值和功能性质,利用直接干燥法、分光光度法等对其进行了蛋白质等营养物质和黄酮等功能物质的测定与分析。结果表明,树参可食嫩叶和成年老叶(鲜品)的含水量分别为82.7%和73.7%,干鲜比分别为1∶5.78和1∶3.80;以鲜叶计,嫩叶和老叶中的粗蛋白含量分别为4.24和2.76 g·100 g^(-1),粗脂肪含量分别为0.38和0.72 g·100 g^(-1),可溶性总糖含量分别为12.17和25.38 mg·g^(-1),纤维素含量分别为25.36和64.41 mg·g^(-1),总有机酸含量分别为0.5176%和0.1655%,游离氨基酸含量分别为6.594和1.102 mg·g^(-1),维生素A含量分别为16.08和26.34μg·g^(-1),维生素C含量分别为508.35和422.24μg·g^(-1),维生素E含量分别为15.70和32.77μg·g^(-1),总黄酮含量分别为3.466和1.668 mg·g^(-1),总多酚含量分别为1.232和0.580 mg·g^(-1),以及较丰富的磷、钾、钙、镁、钠、铁、锰、锌、硒等矿物元素。以上结果表明,树参嫩叶营养较丰富,特别是含有较丰富的黄酮类和多酚类植物质功能性化合物,硝酸盐和亚硝酸盐含量也较低,是较典型的药食两用或具食疗保健功能的木本蔬菜,值得开发利用。
In order to understand the nutritional value and functional properties of Dendropanax dentiger,nutrients such as protein and functional substances such as flavonoids were determined and analyzed.The results showed that the water content of edible young leaves and adult old leaves were 82.7%and 73.7%,respectively,and the dry-fresh ratios were 1∶5.78 and 1∶3.80,respectively.Counted as fresh leaves,the crude protein contents were 4.24 and 2.76 g·100 g^(-1),the crude fat contents were 0.38 and 0.72 g·100 g^(-1),the total soluble sugar contents were 12.17 and 25.38 mg·g^(-1),the cellulose contents were 25.36 and 64.41 mg·g^(-1),the total organic acids were 0.5176 and 0.1655%,and the free amino acids were 6.594 and 1.102 mg·g^(-1),respectively.Vitamin A16.08 and 26.34μg·g^(-1),vitamin C508.35 and 422.24μg·g^(-1),vitamin E15.70 and 32.77μg·g^(-1),total flavonoids 3.466 and 1.668 mg·g^(-1),total polyphenols 1.232 and 0.580 mg·g^(-1),as well as rich phosphorus,potassium,calcium,magnesium,sodium,iron,manganese,zinc,selenium mineral elements,rich in nutrients,In particular,it contains more abundant flavonoids and polyphenols of plant functional compounds,and the content of nitrate and nitrite is also low,which is a typical woody vegetable with medicinal and edible dual-purpose or dietary and health care functions,which is worthy of development and utilization.
