摘要
以果胶的产率及理化性质为考察指标,采用不同萃取剂协同超声波法提取漳州天宝香蕉皮果胶,以壳聚糖(CS)与自制香蕉皮果胶(PEC)为成膜基材,甘油为增塑剂,氯化钙为交联剂制备壳聚糖-果胶(CS-PEC)复合膜,研究壳聚糖与果胶共混聚合比例、甘油添加量、氯化钙交联浓度、交联时间对复合膜机械性能、阻隔性能、热封性能及抗水性能的影响,结果表明:乙二胺四乙酸(EDTA)螯合剂协同超声波法制备香蕉皮果胶得率和品质较好。壳聚糖-果胶(CS-PEC)复合膜制备的最优工艺为:壳聚糖与果胶的共混比例为3∶1(g/g),甘油添加量0.4%,氯化钙交联浓度为质量分数2%,交联时间为5 min,复合膜的过氧化值2.70 meq/kg,水蒸气透过系数0.87 g·mm/m^(2)·day·KPa,抗拉强度14.42 MPa,断裂伸长率11.3%,热封强度159 N/m,溶胀度38%,CS-PEC复合膜具有较好的综合性能。
Pectin was extracted from banana peels of bananas cultivated in Zhangzhou Tianbao area using a synergistic ultrasound extraction method with various extracting agents.Chitosan-pectin(CS-PEC)composite films were then prepared using chitosan(CS)and the extracted pectin(PEC)as film-forming materials,along with glycerol as a plasticizer and calcium chloride as a cross-linking agent.The effects of the chitosan-to-pectin blending ratio,glycerol concentration,calcium chloride concentration,and crosslinking time on mechanical properties,barrier properties,thermal sealing performance,and water resistance of the composite films were investigated.The results indicated that a combination of ethylenediaminetetraacetic acid(EDTA)and ultrasound was the most effective extraction method.The optimal preparation process for the CS-PEC composite film was:a chitosan-to-pectin ratio of 3∶1(g/g),0.4%glycerol,2%calcium chloride,and a 5-minute crosslinking time.The CS-PEC composite film showed a peroxide value of 2.70 MEQ/kg,a water vapor transmission coefficient of 0.87 g·mm/m^(2)·day·kPa,a tensile strength of 14.42 MPa,an elongation at break of 11.3%,a heat sealing strength of 159 N/m,and a swelling degree of 38%.These results demonstrated that CS-PEC composite film had promising comprehensive properties.
