摘要
为揭示硃砂烟叶水分迁移特性及关键因素影响机制,以同株硃砂烟叶和常规烟叶为研究对象,采用水分吸脱附仪、低场核磁共振技术评价硃砂烟叶吸湿特性以及水分赋存状态微观表征,通过剖析烟叶表面形态、微观结构、化学组分含腺毛分泌物组成,获取相关因素对硃砂烟叶与常规烟叶吸湿特性差异的量效关系。结果表明,硃砂烟叶的亲水性糖类组分总含量比常规烟叶低11.10%~16.04%,疏水性高级脂肪酸、高级脂肪烷烃的总含量分别比常规烟叶高11.15%~16.08%、6.06%~6.40%,平均孔径比常规烟叶小27.38~159.86 nm、孔隙率低4.20%~5.65%;硃砂烟叶的水分迁移速率和水分迁移动力学参数(有效扩散系数Deff)均比常规烟叶低,在高湿环境下(>40%RH),硃砂烟叶的平衡干基含水率低于常规烟叶;在吸湿–干燥过程中,硃砂烟叶的锁水能力优于常规烟叶,在40%RH下,其吸湿迟滞ΔMCe为1.22%,而常规烟叶仅为0.14%;烟叶包含自由水、束缚水和结合水3种水分赋存形态,但硃砂烟叶较常规烟叶水分束缚力增强、脱附阻力增大。本研究揭示硃砂烟叶在工艺加工过程中水分迁移行为的关键影响因素,为其加工工艺调控提供基础数据和评价技术支撑。
To investigate the moisture migration characteristics in cherry red tobacco leaves and the influencing mechanisms of key factors,cherry red leaves and conventional leaves sampled from the same tobacco plant were compared using a moisture sorption analyzer and low-field nuclear magnetic resonance(LF-NMR)technology.The moisture adsorption-desorption properties of the cherry red leaves were evaluated and the moisture occurrence pattern in the cherry red leaves was microcosmically characterized.The surface morphology,microstructure,chemical composition,and glandular trichome secretion composition from the tobacco leaves were analyzed to obtain the action-response relationship of the factors affecting the differences in moisture absorption characteristics between the cherry red leaves and conventional leaves.The results showed that the total content of hydrophilic sugars in the cherry red leaves was 11.10%-16.04%lower than that of the conventional leaves,while the total contents of hydrophobic higher fatty acids and higher aliphatic alkanes were 11.15%-16.08%and 6.06%-6.40%higher than those of the conventional leaves,respectively.In addition,the cherry red leaves had smaller average pore sizes(27.38-159.86 nm)and lower porosity(4.20%-5.65%)compared to those of the conventional leaves.Consequently,the moisture migration rate and moisture migration kinetic parameter(effective diffusion coefficient,Deff)were lower in the cherry red leaves.Under higher humidity conditions(>40%RH),the equilibrium dry basis moisture content of the cherry red leaves was also lower than that of the conventional leaves.In the moisture adsorption-desorption cycle test,the cherry red leaves showed superior moisture retention with a hygroscopic hysteresisΔMCe of 1.22%at 40%RH compared to 0.14%for the conventional leaves.It is known that tobacco leaves contain three forms of moisture:free moisture,irreducible moisture,and bound moisture.In particular,the cherry red leaves had an increased moisture binding capacity and resistance to desorption compared to the conventional leaves.The identified key factors affecting the moisture migration behavior of the cherry red leaves during processing provide fundamental data and evaluation techniques for the control and regulation of their processing technology.
