摘要
本项目主要以宋河中高温大曲为研究对象,从中分离优化出高产吡嗪类微生物菌株,根据菌株形态特征、生理生化特性,结合16S rDNA分析技术对菌株进行鉴定,确定该菌株为地衣芽孢杆菌。利用气相色谱-质谱联用技术(GC-MS)对发酵液进行分析,确定该菌株具有较强的产四甲基吡嗪的能力。对该菌株进行扩大培养制成强化大曲,用于酿酒生产,以增加白酒的健康活性因子,完善酒体风格,提高白酒质量。
The high-temperature Daqu in Songhe was targeted in the program to isolate and optimize high-yield pyrazine producing microbial strain.Based on the morphological and physiological characteristics,combined with 16S rDNA analysis technology,the strain was identified as Bacillus licheniformis.The fermentation broth was analyzed by gas chromatography-mass spectrometry(GC-MS),and it was determined that the strain had a strong ability to produce tetramethylpyrazine.The enlarged cultivation of the strain was performed to produce reinforced Daqu,which was used in liquor production to increase the health and active factors of Baijiu,and to improve the style of liquor body and quality of Baijiu.
