摘要
大肠杆菌广泛存在于食品加工和处理的各个环节中,一旦管理不当,极易引发食品污染事件,威胁人体健康和安全。基于此,本研究探讨了大肠杆菌污染对学校食品安全的潜在危害,分析了污染源在学校食品供应链中的分布,并提出了系统化的防控策略。研究发现,食品供应链的多个环节如采购、运输、存储和加工均可能成为大肠杆菌的污染源。为有效防控大肠杆菌污染,本研究提出了基于智能监控和区块链追溯技术的系统,以及多层次的卫生管理和人员培训机制,以增强食品安全管理的全面性与实效性,为学校食品安全管理提供科学支持。
Escherichia coli is widely present in various stages of food processing and handling.Improper management can easily lead to food contamination incidents,posing a threat to human health and safety.Based on this,this study explores the potential hazards of E.coli contamination on school food safety,analyzing contamination sources across the school food supply chain and proposing systematic prevention strategies.The study finds that several stages in the food supply chain can become sources of E.coli contamination,such as procurement,transportation,storage,and processing.To effectively prevent E.coli contamination,this study proposes a system based on smart monitoring and blockchain tracing technologies,along with multi-level sanitation management and staff training mechanisms.These measures enhance the comprehensiveness and effectiveness of food safety management,providing scientific support for school food safety administration.
