摘要
该试验旨在揭示张掖肉牛体尺性状、胴体性状和肉质性状三组性状间的相互关系。采用简单相关分析法和典型相关分析法对三组性状24个变量进行分析。简单相关分析的结果表明:宰前重、胴体重、净肉重分别与体高、十字部高、体斜长、胸围、腹围、管围呈极显著正相关关系(P<0.05)。眼肌面积与胸围、屠宰率呈极显著正相关关系(P<0.01),与肉骨比、胴体产肉率、肌肉颜色、系水力呈极显著负相关关系(P<0.01)。典型相关分析的结果表明:体尺性状与胴体性状的第一典型相关系数达显著相关水平(P<0.05);体尺性状与肉质性状的第一典型相关系数达到极显著相关水平(P<0.01);胴体性状与肉质性状的第一典型相关系数达到极显著相关水平(P<0.01)。体尺性状与胴体性状的第1对典型变量的相关是由管围(X_(6))与胴体重(Y_(2))的相关引起的,第2对典型变量的相关主要由管围(X_(6))和净肉重(Y_(4))引起的。体尺性状与肉质性状的第1对典型变量的相关是由体高(X_(1))与剪切力(Z_(3))的相关引起的,第2对典型变量的相关主要由管围(X_(6))和粗蛋白质(Z_(7))引起的胴体性状与肉质性状第1对典型变量的相关是由胴体产肉率(Y_(8))与蒸煮损失(Z_(10))的相关引起的,第2对典型变量的相关主要由净肉重(Y_(4))和眼肌面积(Z_(6))引起的。可见,体尺性状可以较好地预测部分胴体性状和肉质性状,加速肉牛新品种培育进程。
The purpose of this experiment was to reveal the relationship between body size traits,carcass traits,and meat quality traits of Zhangye beef cattle.Simple correlation analysis and canonical correlation analysis were used to analyze 24 variables of three groups of traits.The results of simple correlation analysis showed that pre-slaughter weight,carcass weight,and net meat weight were significantly positively correlated with body height,cross height,body length,chest circumference,abdominal circumference,and cannon circumference(P<0.05).There was a significant positive correlation between eye muscle area chest circumference and slaughter rate(P<0.01).And a significant negative correlation between eye muscle area and meat-bone ratio,carcass meat yield,muscle color,and water-holding capacity(P<0.01).The results of canonical correlation analysis showed that the first canonical correlation coefficient between body size traits and carcass traits was significantly correlated(P<0.05).The first canonical correlation coefficient between body size traits and meat quality traits reached a significant level(P<0.01).The first canonical correlation coefficient between carcass traits and meat quality traits reached a considerable level(P<0.01).The correlation between the first pair of canonical variables of body size traits and carcass traits was caused by the correlation between cannon circumference(X_(6))and carcass weight(Y_(2)),and the correlation between the second pair of canonical variables was mainly caused by cannon circumference(X_(6))and net meat weight(Y_(4)).The correlation between the first pair of canonical variables of body size traits and meat quality traits was caused by the correlation between body height(X_(1))and shear force(Z_(3)).The correlation between the second pair of canonical variables was mainly caused by circumference(X_(6))and crude protein(Z_(7)).The correlation between the first pair of canonical variables of carcass traits and meat quality traits was caused by the correlation between carcass meat yield(Y_(8))and cooking loss(Z_(10)).The correlation between the second pair of canonical variables was mainly caused by net meat weight(Y_(4))and eye muscle area(Z_(6)).It can be seen that body size traits can better predict some carcass traits and meat quality traits,and accelerate the breeding process of new beef cattle varieties.
