三门青蟹无机元素含量分析

摘要 为了解三门县各产地三门青蟹中无机元素含量情况,采用电感耦合等离子质谱法和火焰原子吸收光谱法对三门青蟹中12种无机元素进行测定。结果表明,三门县各产地三门青蟹污染物元素指标远低于食品中污染物限量标准,三门青蟹富含Se、Ca和Zn等微量元素。各产地三门青蟹间Cu、Mg和Zn元素含量无显著性差异(P<0.05)。除Cr、Zn、Al和Mg元素外,三门青蟹无机元素在性腺组织中的累积量均大于肌肉组织。主成分分析显示三门青蟹无机元素含量与产地无明显相关性,表明三门县各产地青蟹无机元素含量均一性良好。 In order to understand the content of inorganic elements in Sanmen green crab from various origins in Sanmen county,12 kinds of inorganic elements in Sanmen green crab were measured using inductively coupled plasma mass spectrometry and flame atomic absorption photometry.The results show that the pollutant element index of Sanmen green crab from various producing areas in Sanmen county is far lower than the limit standard of pollutants in food.Sanmen green crab are rich in trace elements such as Se,Ca and Zn.There was no significant difference in Cu,Mg and Zn element contents among Sanmen green crab from various origins(P<0.05).Except for Cr,Zn,Al and Mg elements,the accumulated amounts of inorganic elements in blue crab gonadal tissue are greater than those in muscle tissue.Principal component analysis showed that there was no obvious correlation between the inorganic element content of Sanmen green crab and the origin,indicating that the inorganic element content of green crab from various producing areas in Sanmen county had good uniformity.
