摘要
山楂是重要的药食同源原料,具有很高的食用价值及保健价值。山楂的果、核、叶含有多种功能性成分,具有抗氧化、抗炎、调节血脂及神经保护的作用。通过综述目前山楂加工制品的加工技术及山楂色素、山楂果胶、山楂核、山楂叶的综合开发利用现状,为山楂的加工及综合开发利用提供参考,以期促进山楂资源的高值化利用,推动山楂产业发展。
Hawthorn is an important medicine and food homology material with high edible value and health care val⁃ue.The fruit,seeds,and leaves of hawthorn contain various functional components,which have anti-oxidation,anti-in⁃flammation,blood lipids regulation,and neuroprotective effects.By summarizing the current processing technology of hawthorn products and the comprehensive development and utilization of hawthorn pigment,pectin,seeds,and leaves,the reference is provided for the processing and comprehensive development and utilization of hawthorn,in order to promote the high-value utilization of hawthorn resources and promote the development of hawthorn industry.
