摘要
百香果属于热带水果,生长成熟所需温度较高,但百香果属于呼吸跃变型水果,在采后会快速呈现出失水萎缩、褐变、风味变化等影响商品货架期及价值的情况,从物理、化学、生物、复合4种保鲜技术概述目前百香果的保鲜技术现状,并对未来研究趋势进行展望。
Passion fruit belongs to tropical fruit,and the temperature of growth and maturity is relatively high,but passion fruit belongs to climacteric fruit,which will quickly showed water loss and atrophy,browning,flavor change and other conditions that affect the shelf life and value of goods after harvest.This paper explained the current status of passion fruit preservation technology from the physical,chemical,biological,and composite four preservation technologies,and prospects the future research trend accordingly.
