摘要
以银耳和雪梨汁为原料,对银耳雪梨复合保健饮料的加工工艺进行研究。确定银耳雪梨复合保健饮料的最佳配方:银耳和雪梨提取液复合比例5︰5、木糖醇添加量12.00%、柠檬酸添加量0.1%、黄原胶的添加量0.02%。此产品酸甜适口、香气浓郁,具有银耳和雪梨复合饮料特有的香气和滋味。
Using Tremella fuciformis and Sydney juice as raw materials,the processing technology of Tremella fuciformis Sydney composite health drink was studied.The best formula for the compound health drink was determined to be 5︰5 for the compound of Tremella fuciformis and Sydney extract,12.00%for xylitol added,0.1%for citric acid,and 0.02%for xanthan gum.This product is sweet and sour,rich in aroma,and has the aroma and taste characteristic of Tremella fuciformis and Sydney compound drinks.
