摘要
以和田红葡萄为研究对象,采用高效液相色谱、酶标仪等技术分析了果肉、果皮和籽的总酚、总黄酮、游离多酚及抗氧化能力。结果表明,和田红葡萄果肉中的可溶性固形物含量22.14%,总酸0.52%,维C 3.64 mg/100 g;葡萄糖和果糖是其主要的游离糖,占总游离糖的98.31%;和田红葡萄不同组织的多酚和抗氧化能力差异显著(p<0.05),葡萄籽中多酚含量及抗氧化能力最高,其次为果皮,果肉中最低;从和田红葡萄不同组织中一共检测出9个酚类化合物,除矢车菊素3-葡萄糖苷只存在于果皮中,籽中游离多酚的含量均是最高,其中芦丁、白藜芦醇、表儿茶素和儿茶素的含量超过30μg/g。这说明和田红葡萄的多酚主要存在于皮和籽中,该研究为和田红葡萄及穆萨莱思副产物利用提供理论依据。
In this study,the total phenols,total flavonoids,free polyphenols and antioxidant capacity of pulp,peel and seeds of grape fruit(Vitis vinifera L.cv.Hetianhong)were analyzed by the technologies of high performance liquid chromatography,microplate reader and so on.The results showed that the soluble solid content of pulp was 22.14%,total acid was 0.52%,VC was 3.64 mg/100 g;Glucose and fructose were the main free sugars,accounting for 98.31%of the total free sugars.The polyphenol content and antioxidant capacity of different tissues of grape fruit were significantly different(p<0.05).The polyphenol content and antioxidant capacity of seed were the highest,followed by the peel,and the pulp was the lowest.A total of 9 phenolic compounds were detected from different tissues of grape fruit.Except for cyanidin 3-glucoside,the content of free polyphenols in seeds was the highest,among which the content of rutin,resveratrol,epicatechin and catechin exceeded 30μg/g.This indicates that the polyphenols of grape fruit mainly exist in the skin and seeds.This study provided a theoretical basis for the utilization of grape fruit(Vitis vinifera L.cv.Hetianhong)and the byproducts of Msalai.
