摘要
红薯作为世界排名第七的粮食作物,其中含有大量的碳水化合物、维生素、食用纤维及矿物质等,营养价值极高。与此同时它还是重要的饲料、工业材料及能源作物。根据红薯的研究现状及进展,对红薯及红薯制品的营养成分、营养功能、贮藏及加工等进行概述,形成了对红薯研究现状及进展的综述,同时发现红薯具有极大的研究价值及发展前景。
As the seventh largest food crop in the world,sweet potato contains a lot of carbohydrates,vitamins,edible fiber,minerals and other substances,with high nutritional value.At the same time,it is also an important feed,industrial materials and energy crops.According to the research status and progress of sweet potato,this paper summarized the nutritional composition,nutritional function,storage and processing of sweet potato and sweet potato products,and forms a summary of the research status and progress of sweet potato.At the same time,it was found that sweet potato had great research value and development prospect.
