摘要
黄曲霉毒素是由曲霉属产生的一类具有强致癌、致畸性的次级代谢产物。它易污染于花生等油料作物,进而致使花生及花生加工制品中存在黄曲霉毒素残留,造成极大食用安全隐患。因此,加强花生及其制品中黄曲霉毒素的准确检测及高效脱除具有重要意义。文章综述了花生及其制品中黄曲霉毒素的检测与脱除技术,总结了各种技术的特点与应用,并展望了未来花生及其制品中黄曲霉毒素的检测与脱除技术发展方向,以期为该领域后续相关工作开展提供技术参考。
Aflatoxin is a class of highly carcinogenic and teratogenic secondary metabolites produced by Aspergillus.It is easy to contaminate oil crops such as peanuts,which leads to the presence of toxin residues in peanut and its products,causing great potential food safety hazard.Therefore,it is of great significance to strengthen the accurate detection and efficient removal of aflatoxins in peanut and its products.In this paper,the detection and removal technologies of aflatoxins in peanut and its products were reviewed,the characteristics and applications of various technologies were summarized,and the development direction on the detection and removal technologies of aflatoxins in peanut and its products was prospected in the future,in order to provide technical reference for the follow-up work in this field.
