不同品种、不同储藏条件植物油过氧化值变化规律研究 被引量:5

STUDY ON THE CHANGE LAW OF PEROXIDE VALUE UNDER DIFFERENT VARIETIES AND STORAGE CONDITIONS OF VEGETABLE OIL

摘要 通过对不同品种、不同储藏条件植物油实仓储藏期间过氧化值变化规律研究分析,发现相同条件下,油罐罐容越大,装油比例越高,油脂氧化稳定性越强。油脂过氧化值在第一储藏阶段(入仓后前4个月)上升最快,罐容越大,中后期储藏稳定性越高,当罐容过小(≤3000 t)时,油脂储藏期间过氧化值全程上升都较快,保管难度较大。当装油比例≥90%时,油脂储藏性质比较稳定,过氧化值增长较为缓慢;当装油比例≤60%时,油脂储藏性质较为活跃,过氧化值增长速度显著提高。目前国内储备规模最大的几种油脂氧化稳定性从优到劣依次为:菜籽原油>三级菜籽油>大豆原油。 This paper studied the change rule of peroxide value during storage of vegetable oil with different varieties and storage conditions,it was found that under the same conditions,the larger the tank capacity,the higher the oil loading ratio and the stronger the oxidation stability of oil.In the first storage stage(the first four months after storage),the peroxide value of oil increasd the fastest,and the larger the tank volume was,the higher the storage stability was in the middle and later stages,when the tank volume was too small(≤3000 t),the peroxide value of oil during the whole storage period increased rapidly,and the storage was more difficult.When the oil loading ratio≥90%,the oil storage property was relatively stable and the peroxide value growth was relatively slow;when the oil loading ratio≤60%,the oil storage property was relatively active and the peroxide value growth rate was significantly increased.At present,the oxidation stability of several kinds of oils with the largest reserves in China from best to worst were:rapeseed crude oil>tertiary rapeseed oil>soybean crude oil.
