摘要
水芹是一种优质保健蔬菜,含有多种营养和功能性成分,具有显著的药理保健功能,在我国中部与南部地区广泛种植。随着水芹产业的快速发展,对水芹进行开发利用具有明确的现实意义。在介绍水芹安全性研究现状的基础上,对我国水芹贮藏保鲜和开发利用研究进展进行综述,为水芹的开发利用提供参考。
Oenanthe javanica,a kind of health vegetable,contains a variety of nutritional and functional components,and has significant pharmacological and healthy actions.With the rapid development of Oenanthe javanica industry in China,the utilization of Oenanthe javanica has clear practical significance.In this paper,in order to provide references for the utilization of Oenanthe javanica in China,progress of studies on safty,preservation and utilization of Oenanthe javanica in China was reviewed.
