木薯的营养价值及其在猪与禽生产中的应用研究进展 被引量:11

摘要 随着木薯种植面积与产量的持续增长,木薯的营养价值与在畜禽生产领域的可利用性正逐渐受到学者们的关注。木薯的淀粉含量高,能值与玉米近似,具有玉米替代潜力。但是,氢氰酸作为木薯中最主要的抗营养因子会对机体产生毒害作用,降低木薯及其加工产物的营养价值。本文基于国内外已发表的木薯数据库中的数值,直观展示了木薯的主要营养成分在各数据库中存在的差异,分析了木薯的营养价值与特性,阐述了木薯中主要抗营养因子,介绍了木薯的常见加工工艺与加工产物的营养价值,并总结了近些年有关木薯及其加工产物在猪与禽生产中的应用情况,为饲料企业充分了解木薯的营养价值、相关加工产物的营养特性及在猪与禽生产领域的应用前景提供参考。 The nutritional value and availability of cassava in livestock and poultry production is gaining attention from scholars as the acreage and production of cassava continues to grow.Cassava has a high starch content and the energy value similar to that of maize,so it has the potential to replace maize.However,hydrocyanic acid,the main anti-nutritional factor in cassava,can have toxic effects on the body and reduce the nutritional value of cassava and its processed products.Based on the data in the published cassava databases at home and abroad,this paper intuitively showed the differences of the main nutritional components of cassava in each database,analyzed the nutritional value and characteristics of cassava,expounded the main anti-nutritional factors in cassava,and introduced the common processing technologies of cassava and the nutritional value of processed products,and summarized the application of cassava and its processed products in the field of pig and poultry production in recent years,This paper will provide reference for feed enterprises to fully understand the nutritional value of cassava,the nutritional characteristics of related processed products and the application prospect in the field of pig and poultry production.
