摘要 葡萄在采后贮运物流过程中极易发生由病原微生物和生理代谢失调引发的腐损变质,严重影响着葡萄的贮藏品质。1-甲基环丙烯(1-MCP)是一种乙烯受体抑制剂,在葡萄采后贮藏保鲜中得到了推广应用,并取得了显著效果。本文着重叙述了1-MCP应用于葡萄保鲜的研究进展,归纳分析了近年来1-MCP处理对葡萄外观品质、呼吸强度、质构、营养成分和风味物质的影响,以及1-MCP结合其他理化手段在葡萄贮藏保鲜中的应用及其对葡萄品质影响的作用机制,并对其发展趋势进行展望,以期能够为1-MCP在葡萄贮藏保鲜上的研究提供理论依据。 In the process of postharvest storage, transportation and logistics, grape is prone to rot and deterioration caused by pathogenic microorganisms and physiological and metabolic disorders, which seriously affects the postharvest storage and shelf life of grape. 1-methylcyclopropene(1-MCP), an ethylene receptor inhibitor, has been widely used in postharvest storage and has achieved remarkable results. Authors focused on the research progress of 1-MCP application in grape preservation, summarized and analyzed the effects of 1-MCP treatment on grape appearance quality, respiratory intensity, texture, nutrients and flavor substances in recent years, as well as the application of 1-MCP combined with other physical and chemical methods in grape storage and preservation, and its action mechanism on grape fruit quality and its development trend was prospected, so as to provide theoretical basis for the study of 1-MCP in grape storage and preservation.
