摘要
布拉氏酵母菌是酿酒酵母亚种之一,是益生菌中唯一的酵母菌.本文从益生性和功能性两方面系统评价了布拉氏酵母菌.首先运用平板稀释涂布测活菌数的方法,探究其在模拟胃液中的耐受能力及对胆盐的耐受能力,结果表明布拉氏酵母菌对pH=3胃液和0.3%胆盐都具有较好的耐受能力.通过体外降胆固醇、抗氧化能力实验研究了布拉氏酵母菌的功能特性,结果表明布拉氏酵母菌可以降解培养基中的胆固醇,去除率可达到25.05%,同时其具有较好的抗氧化能力,并随着菌体浓度增大抗氧化能力增强.布拉氏酵母菌的菌体浓度为10^(8)CFU/mL时,DPPH·清除率为31.74%,·OH清除率为41.26%,O_(2)^(-)·清除率为13.17%,还原能力相当于25.79μmol/L抗坏血酸.
Saccharomyces cerevisiae boulardii is one of the species of Saccharomyces cerevisiae and the only yeast in the probiotics.Probiotic characteristics and functional properties of Saccharomyces cerevisiae boulardii were test in this experiment.First of all, this experiment used the method of plate dilution coating to measure the number of viable bacteria to explore its tolerance in simulated gastric juice and bile.The results showed that: Saccharomyces cerevisiae boulardii can withstand simulated gastric pH=3.0 and 0.3% concentration of bile salt.The functional properties of Saccharomyces cerevisiae boulardii were explored by in virtro cholesterol-lowering and antioxidant.The results showed that: Saccharomyces cerevisiae boulardii degraded medium cholesterol levels, remove rate was 25.05%.Moreove it had a high antioxidant capacity, and the capacity showed increasing trend with the concentration of bacteria increasing.When the bactercity concentration was about 10^(8) CFU/mL,DPPH·clearance rate was 31.74%,O_(2)^(-)clearance rate was 13.17%,·OH clearance rate was 41.26%,reducing power was equivalent to 25.79 μmol/L ascobicacid·OH.
