武夷名丛正白毫植物学形态及适制性研究 被引量:2

摘要 为挖掘和筛选武夷山茶区优良乌龙茶种质资源,以武夷名丛正白毫为研究对象,开展植物学形态观测,制作绿茶、白茶和乌龙茶并进行感官评价分析。结果表明,正白毫茶树小乔木型,叶片水平状着生,椭圆形,叶色绿、有光泽,叶身平,叶质较厚软,主脉粗显,叶缘平,叶齿较密浅锐,叶尖钝尖,芽叶淡绿色,茸毛特多;以正白毫茶树鲜叶制作的绿茶,其L-茶氨酸、表儿茶素、表没食子儿茶素没食子酸酯、表儿茶素没食子酸酯、咖啡碱含量分别为(13.44±0.70)mg/g、(6.27±0.16)mg/g、(97.16±2.67)mg/g、(10.21±0.31)mg/g、(23.19±1.04)mg/g,高于正白毫白茶和乌龙茶;正白毫白茶中没食子酸含量较高,为(0.50±0.02)mg/g,而正白毫乌龙茶中表没食子儿茶素含量较高,为(26.42±1.24)mg/g。正白毫制作白茶特色鲜明,品质较优,制作绿茶的品质也较好,而制成乌龙茶品质略逊。因此,武夷名丛正白毫表现出良好的白茶、绿茶适制性。 In order to screen the excellent germplasm resources Oolong tea,The botanical morphology ofWuyi Mingcong Zhengbaihao were observed and detected.Meanwhile,green tea,white tea and Oolong tea were produced and evaluated.The results showed that the tree shape of Zhengbaihao is small tree type,the leaves are horizontal and oval,green and shiny,the leaf body is flat,thick and soft,the main veins are thick and obvious,the leaf margin is straight,the serrations are dense and shallow,the end of the leaf is blunt,the buds are light green,and the leaf trichome are very thickly.The biochemical results of green tea from Zhengbaihao tea plant showed that the contents of L-The,EC,EGCG,ECG and CAF were(13.44±0.7)mg/g,(6.27±0.16)mg/g,(97.16±2.67)mg/g,(10.21±0.31)mg/g,(23.19±1.04)mg/g,the fine in each group,respectively.The content of GA was(0.50±0.02)mg/g,while the fine content of EGC was(26.42±1.24)mg/g.The white tea produced by Zhengbaihao showed that distinctive features and the better quality,while the quality of green tea is better too,while the quality of Oolong tea is slightly inferior to the other two kinds of tea.Therefore,Wuyi Mingcong"Zhengbaihao"is ideal for making white tea and green tea.
