摘要
随着经济水平的不断提升,人们对食品的关注点逐步聚焦于营养健康,因此有益于人体健康的动植物蛋白产品在众多食品中脱颖而出。由于畜牧业的不可持续性,导致动物蛋白的产出跟不上人们日益增长的蛋白质消费需求。而植物蛋白的摄取不但可以缓解畜产品的供给压力,在环境和社会层面也具有可持续性。本文总结了植物蛋白的主要应用产品及其加工工艺,讨论了植物蛋白产品在发展中存在的问题,以期促进植物蛋白产品应用的进一步发展。
With the continuous improvement of the economic level,people’s attention to food is gradually focused on nutrition and health,and protein-rich animal and plant products stand out among many foods.Due to the unsustainability of animal husbandry,the output of animal protein has not kept pace with the growing demand for protein consumption.The intake of plant protein can not only alleviate the supply pressure of livestock products,but also be sustainable at the environmental and social levels.This paper summarizes the main application products of plant protein and its processing technology,and discusses the problems existing in the development of plant protein products,in order to promote the further development of plant protein product applications.
