摘要
食品有害物不仅影响食物的风味和品质,而且摄入后损伤机体健康。细胞焦亡是新近发现的一种细胞程序性、炎性死亡方式,参与非酒精性脂肪肝病、肝炎、肝癌及动脉粥样硬化、痛风等的发生发展中。文章详细综述了细胞焦亡的概念、形态学特征、相关信号通路及其在食品有害物诱发肝脏毒性和免疫毒性过程中的作用机制,为揭示食品有害物的毒性机制及其毒性控制提供新的思路。
Food hazards not only affect the flavor and quality of the food,but also damage the body’s health after ingestion.Pyroptosis is a newly discovered form of programmed and inflammatory cell death,which is involved in the occurrence and development of nonalcoholic fatty liver disease,hepatitis,liver cancer,atherosclerosis and gout.In this paper,the concept of pyroptosis,morphological characteristics,related signal pathways and the mechanism of pyroptosis in the process of hepatotoxicity and immune tissue toxicity induced by food hazards were reviewed,which provided a new idea for fully revealing the toxicity mechanism and toxicity control of food hazards.
