酶法制备高含量多不饱和脂肪酸甘油三酯的工艺 被引量:1

The Preparation of High-Content Polyunsaturated Fatty Acid Triglyceride by Enzymatic Method

摘要 采用脂肪酶催化乙酯型鱼油制备甘油三酯型鱼油。通过单因素试验,分别考察底物摩尔比、酶添加量、反应温度、反应时间对乙酯转化率的影响。在单因素试验基础上,设计正交试验,得到酶反应的最优条件:底物摩尔比3︰1、酶添加量3%、反应温度55℃、反应时间15 h。 Triglyceride-type fish oil was produced by lipase catalyzed ethyl ester-type fish oil.The effects of the molar ratio of substrate,enzyme addition,reaction temperature and reaction time on the conversion rate of ethyl ester were investigated through single-factor experiments.On the basis of single factor experiments,orthogonal experiments were designed to obtain the optimal condition for the enzyme reaction that was the molar ratio of substrate 3︰1,the amount of enzyme addition 3%,the reaction temperature 55℃and the reaction time 15 h.
