摘要
本研究以阿拉伯胶、麦芽糊精和β-环糊精为壁材,采用喷雾干燥法制备番茄红素微胶囊,在单因素试验基础上利用响应面法优化了喷雾干燥工艺。结果表明,当壁材阿拉伯胶、麦芽糊精和β-环糊精配比为1∶1∶2,芯壁比为1∶4,进风温度170℃和雾化器转速290 r·s^(-1)时,番茄红素微胶囊包埋率为87.55%。该研究结果可为喷雾干燥工业化生产番茄红素微胶囊提供一定的参考。
In this study,spray drying method was used to prepare lycopene microcapsules using acacia gum,maltodextrin andβ-cyclodextrin as the wall materials.The spray drying process was optimized by response surface method based on single factor experiment.The results showed that when the ratio of acacia gum,maltodextrin andβ-cyclodextrin was 1∶1∶2,ratio of core material and wall material was 1∶4,inlet air temperature was 180℃and atomizer speed was 290 r·s^(-1),the embedding rate of lycopene microcapsules was 87.55%.The results provide a reference for the industrial production of lycopene microcapsules by spray drying.
