噬菌体在畜牧养殖及肉制品加工中的应用 被引量:7

摘要 随着抗菌药物在畜牧养殖行业的大量使用,引起了细菌耐药性,抗菌药物残留等多种问题,亟需新的抗菌药物替代品。在自然界中广泛存在的噬菌体因具有特异性强、杀菌效果显著、安全性高且成本低廉等众多优点被用于新型抑菌剂的研发,随着技术的不断发展,相关的研究也更加深入,目前噬菌体在生物防治、细菌检测、食品安全保障等众多方面都发挥了巨大作用。论文介绍了噬菌体的分类、作用机制以及目前的市场现状,总结分析了噬菌体在畜禽幼龄期、成长发育和产品加工三个阶段中的应用现状,并对噬菌体未来的应用方向进行了预测,以期为噬菌体在畜牧养殖和肉制品加工中的应用提供参考。 With the extensive use of antibiotics in the animal husbandry,it has caused various problems such as bacterial resistance and antibiotic residues.New antibiotic substitutes are urgently needed.Bacteriophages,which are widely present in nature,are used in the research and development of new bacteriostatic agents because of their strong specificity,significant bactericidal effect,high safety and low cost.With the continuous development of technology,related research has become more in-depth.At present,bacteriophages have played a huge role in many aspects such as biological control,bacterial detection,and food safety assurance.This article introduced the classification,mechanism of action,and current market status of phages summarized and analyzed the application status of phages in the three stages of animal young age,growth and development,and product processing,and predicted the future application direction of phages in order to provide reference for the application of bacteriophages in the animal husbandry.
