摘要
通过测定峨边山地散养青脚麻鸡鸡蛋的蛋品质、常规理化项目、氨基酸、元素和维生素的种类及含量,评价峨边山地散养青脚麻鸡鸡蛋的营养价值。结果显示:峨边山地散养青脚麻鸡鸡蛋等级规格为一级,富含蛋白质、脂肪、维生素B_(1)和B_(2),胆固醇含量较低;含有17种氨基酸,EAA/TAA和EAA/NEAA均高于WHO/FAO理想蛋白质标准;富含常量元素(钠、磷、钾、钙、镁)和微量元素(铜、锌、硒、铁、铬),含微量的重金属铝(0.46 mg/kg)。可见,峨边山地散养青脚麻鸡鸡蛋的蛋品质优质,营养价值高,是适合人们食用的健康食品,具有广阔的开发前景。
The nutritional value of Ebian mountain free-range Partridge Shank chicken eggs was evaluated by determining the egg quality,routine physical and chemical items,amino acids,elements and vitamin types and contents.The results showed that the eggs of Ebian mountain free-range partridge shank chicken were grade ONE,rich in protein,fat,vitamin B1 and B2,and low in cholesterol.Eggs contain 17 kinds of amino acids,EAA/TAA and EAA/NEAA were higher than WHO/FAO ideal protein standard.It is rich in major elements(sodium,phosphorus,potassium,calcium,magnesium)and trace elements(copper,zinc,selenium,iron,chromium),and contains trace amounts of aluminum(0.46 mg/kg).It can be seen that the eggs of Ebian mountain free-range partridge shank chicken are of high quality and high nutritional value,which are healthy food suitable for people to eat and have broad development prospects.
