摘要
重金属在食品的制作、生产等各个阶段都有可能进入食物,在积累到一定程度之后摄入人体,就会对人体造成严重危害。且不同重金属的特性有所不同,技术人员在检验过程中需要做到有针对性的落实工作,即分析食品当中重金属实际种类以及含量,最终使用相应的检测和样品处理方法落实工作,原则就是保障检验结果的准确性。在这样的背景下,本文先罗列了食品当中常见的几种重金属元素,分析了其主要来源,同时分别研究了食品重金属检验方式和样品处理细节,最终通过实例分析的方式进行总结,希望能够为食品重金属检验工作的质量提升提供合理参考。
Heavy metals may enter food at all stages of food production and production.If they are absorbed into human body after accumulating to a certain extent,they will cause serious harm to human body.And the characteristics of different heavy metals are different.Technicians need to carry out targeted implementation work in the inspection process,that is,analyze the actual types and contents of heavy metals in food,and finally implement the work by using corresponding detection and sample processing methods.The principle is to ensure the accuracy of inspection results.In this context,this paper first lists several common heavy metal elements in food,analyzes their main sources,studies the food heavy metal inspection methods and sample processing details respectively,and finally summarizes them through example analysis,hoping to provide a reasonable reference for the improvement of the quality of food heavy metal inspection.
