摘要
概述膳食纤维的定义。介绍膳食纤维在面制品、肉制品和乳制品等食品工业中的开发应用,以及对糖尿病、心血管疾病、肥胖和便秘等的预防效果。提出应充分利用我国膳食纤维的资源优势,大力发展膳食纤维产业。
This paper summarizes the definition of dietary fiber,introduces the development and application of dietary fiber in food industry such as flour products,meat products and dairy products,and its prevention effect on diabetes,cardiovascular disease,obesity and constipation.It is suggested that we should make full use of the resource advantage of dietary fiber and develop dietary fiber industry in China.
