发酵法提取葡萄皮渣中可溶性膳食纤维的研究 被引量:6

摘要 以葡萄皮渣粉为原料,葡萄皮渣中可溶性膳食纤维(SDF)得率为指标,研究不同因素对发酵法提取葡萄皮渣中SDF的影响。研究了菌种接种量、pH值、料液比、发酵时间四个因素对提取结果的影响,通过上述单因素试验的结果设计正交试验探索发酵法提取葡萄皮渣中可溶性膳食纤维的最佳工艺条件。试验结果显示:菌种接种量为2.5%,pH为6.4,料液比1∶6,发酵时间20 h时葡萄皮渣中可溶性膳食纤维得率达到29.2%。 The effect of different factors on the extraction of SDF from grape peel pomace by fermentation was investigated using grape peel pomace powder as raw material and soluble dietary fiber(SDF)yield in grape peel pomace as the index.The effects of four factors on the extraction results were investigated:the inoculum of strain,pH,material-liquid ratio and fermentation time.The results of the above single-factor experiments were used to design orthogonal experiments to explore the optimal process conditions for the extraction of soluble dietary fiber from grape peel pomace by fermentation.The results of the experiment showed that the inoculum of the strain was 2.5%,pH was 6.4,the feed to liquid ratio was 1:6,and the fermentation time was 20 h.The yield of soluble dietary fiber in grape peel pomace was 29.2%.
