不同成熟度雪茄烟叶晾制过程中颜色表征及主要化学成分变化特征 被引量:9

Color Characterization and Main Chemical Components Change characteristics of Different Maturity Cigar Leaves during Air-Curing

摘要 为明确不同采收成熟度雪茄烟叶晾制过程中,其颜色表征与主要化学成分的变化特征及二者之间的关联,以ND-2为供试材料,设置M1、M2及M3三种采收成熟度,比较分析不同采收成熟度雪茄烟叶晾制期间的主要化学成分变化特征,并通过CIE Lab颜色系统检测其明度色品指数L*、红绿色品指数a*、黄蓝色品指数b*,计算饱和度C、总色差△E及褐变指数BI值,继而分析颜色表征变化规律及其与主要化学成分之间的关系。结果显示,总氮、烟碱、氯含量总体表现为M3>M2>M1,总糖、还原糖及钾含量表现为M1>M2>M3,L*、a*、b*、C、△E及BI值均表现为M3>M2>M1;L*、BI与烟碱含量呈负相关、与钾含量呈正相关,△E与总氮含量呈负相关,BI与氯含量呈负相关,b*、C与总糖及还原糖呈正相关。典型冗余分析结果可知,4组典型变量共解释颜色表征指标自身变异96.50%、常规化学成分指标自身变异67.00%的信息;颜色表征的4组典型变量反映常规化学成分85.20%的信息,常规化学成分的4组典型变量反映颜色表征47.30%的信息。本试验通过研究晾制过程中雪茄烟叶颜色表征与常规化学成分的关系及二者的变化规律,可为产区提供关于雪茄烟晾制的理论参考,为提升雪茄烟叶晾制质量、深化雪茄烟叶晾制工艺研究、提高雪茄烟叶工业可用性作理论支持。 This study was conducted in order to clarify the variation characteristics of color and main chemical components of cigar tobacco leaves with different harvest maturity during air-curing process,and also their correlations.The cultivar ND-2 was used as test material,and three maturity levels were set as M1,M2 and M3.The main chemical compositions of cigar tobacco leaves with different harvest maturity were determined and compared during air-curing.The CIE Lab color system was used to detect its lightness and color index L*,red-green color index a*,yellow blue index b*,calculation of saturation C,total color difference△E and browning index BI were determined,and then analyzed their change characteristics and correlations with the main chemical components.The results showed that the overall performance of total nitrogen,nicotine,total sugar,reducing sugar and chlorine was M3>M2>M1,potassium performance was M1>M2>M3,and the performance of L*,a*,b*,C,△E and BI were M3>M2>M1.L*and BI were negatively correlated with nicotine,positively correlated with potassium;△E was negatively correlated with total nitrogen;BI was negatively correlated with chlorine;b*and C were positively correlated with total sugar content and reducing sugar content.The canonical correlation analysis results showed that the four groups of canonical variable could explain 96.50%of color characteristics variation and 67.00%of chemical composition variation;the four groups of canonical variable of color characteristics reflected 85.20%information of chemical composition,while those of chemical composition characteristics reflected 47.30%information of color characteristics.All these results could provide references for improving air-curing quality,deepening air-curing technology research and increasing industrial availability of cigar tobacco leaves.
