2016年—2019年河南省预包装食品中菌落总数检出情况分析 被引量:2

Analysis of aerobic plate count detected in pre-packaged foods in Henan Province from 2016 to 2019

摘要 目的了解河南省2016年—2019年销售的预包装食品中菌落总数超标情况,为市场监管部门提供准确信息,加强对预包装食品安全的监管。方法对2016年—2019年抽检的预包装食品中菌落总数的超标情况进行统计分析。结果11688批次的预包装食品中,170批次检出菌落总数超标,不合格率为1.45%。7978批次城市抽检的预包装食品中检出65批次超标,不合格率为0.81%;3710批次乡村抽检的预包装食品中检出106批次超标,不合格率为2.86%。1979批次方便食品中检出81批次超标,不合格率为4.09%;649批次薯类和膨化食品中检出10批次超标,不合格率为1.54%;188批次速冻食品中检出8批次超标为速冻面米制品,不合格率为4.26%。结论2016年—2019年河南省内销售的各类食品中菌落总数超标的情况,乡村销售的各类食品菌落总数不合格率高于城市,方便食品、速冻面米制品的菌落总数不合格率明显高于其他种类食品,风险较高。 Objective To understand the excessive situation of total aerobic plate count in the pre-packaged foods sold in Henan Province from 2016 to 2019,and provide accurate information for market regulatory authorities and strengthen the supervision of pre-packaged food safety.Methods The excessive situation of total aerobic plate count in pre-packaged foods sampled from 2016 to 2019 was statistically analyzed.Results Among the 11688 batches of pre-packaged food,the exceeding of the total aerobic plate count were found in 170 batches,and the unqualified rate was 1.45%.Among the 7978 batches of prepackaged food sampled in cities,65 batches exceeded the standard,with the unqualified rate of 0.81%;among the 3710 batches of prepackaged food sampled in rural areas,106 batches were found to exceed the standard,with the unqualified rate of 2.86%.Among 1979 batches of convenience food,81 batches exceed the standard,with the unqualified rate of 4.09%.Among 649 batches of potato and puffed food,10 batches exceeded the standard,with the unqualified rate of 1.54%.Among 188 batches of quick-frozen food,8 batches exceeded the standard,mainly including quick-frozen surface rice products,with the unqualified rate of 4.26%.Conclusion From 2016 to 2019,the total number of aerobic plate count in all kinds of food sold in Henan Province exceeded the standard.The unqualified rate in rural areas was higher than that in urban areas.The unqualified rate in convenient food and quick-frozen noodle and rice products was significantly higher than that of other kinds of food,indicating a high risk.
