全寿命周期下茶叶质量安全可追溯体系评价与关键技术研究

摘要 当今社会,食品质量安全是重要的社会话题,茶叶作为一种进入千家万户的普通食品,其质量安全备受瞩目。在科技发达的今天,随着RFID、二维码等信息通信技术的普及应用,普通大众只要打开手机APP扫码便可辨别真伪,甚至可以查询到茶叶的原产地等信息。近年来,茶叶质量安全可追溯体系建设成为学者们研究的热点。文章从全寿命周期视角出发,以西湖龙井茶为例,运用层次分析法对西湖龙井茶质量安全可追溯体系指标进行了评价,结果发现信息技术在整个评价体系中权重最高。进而,对目前质量安全溯源体系关键信息技术进行了阐述,推而广之,为今后农产品质量安全可追溯体系建设提供技术解决方案和参考。 In today's society,food quality and safety is an important social topic.As a common food entering thousands of households,the quality and safety of tea has attracted much attention.Today,with the development of science and technology,with the widespread application of RFID,QR code and other information and communication technology,the general public can tell the authenticity by opening the APP scan code,and even inquire about the origin of tea and other information.In recent years,the construction of tea quality and safety traceability system has become the focus of scholars'research.From the perspective of the whole life cycle,taking West Lake Longjing Tea as a case,this paper evaluates the traceability system index of Xihu Longjing Tea's quality and safety by analytic hierarchy process(AHP).The results show that information technology has the highest weight in the whole evaluation system.Furthermore,the key information technologies of the current quality and safety traceability system are described and extended to provide technical solutions and references for the construction of agricultural product quality and safety traceability system in the future.
