植物油中苯并芘的来源及检测方法研究进展 被引量:4

摘要 文章陈述了植物油中苯并(a)芘的来源和检测技术。植物油中苯并(a)芘的来源主要是原料和生产过程的热加工。当原料生长或晾晒在被苯并(a)芘污染的环境中时,原料中可能会含有迁移的苯并(a)芘;在植物油的生产过程中热加工会引起原料中的有机物经复杂的化学反应产生苯并(a)芘。随着新技术的发展,检测方法有快检及定量两类方法。快检法主要为酶联免疫法;定量方法主要为中性氧化铝柱、分子印迹柱和凝胶色谱法等多种净化方法,将植物油净化除杂后使用液相色谱、液质联用、气质联用和表面增强拉曼光谱检测。 The source and detection technique of Benzo(a)pyrene in plant oil are discussed in this paper.The sources of Benzo(a)pyrene in plant oil are mainly divided into two aspects:raw materials and hot processing in the production process.Migration of Benzo(a)Pyrene may be present in the raw material when it is grown or dried in an environment contaminated with Benzo(a)Pyrene.Thermal processing in the production of plant oil causes complex chemical reactions of organic compounds in the feedstock to produce Benzo(a)pyrene.With the development of new technology,there are two kinds of detection methods:fast detection and quantitative detection.The rapid detection method was enzyme-linked immunosorbent assay(ELISA).The quantitative methods are neutral alumina column,molecular imprinting column and gel chromatography.After the plant oil is purified,it is detected by HPLC,LC-MS,GC-MS and Surface Enhanced Raman Spectroscopy.
